Tschüss "Hugo", willkommen "Maid in Cuba" - wir haben einen neuen Lieblingscocktail mit Rum und Gurke und verraten an dieser Stelle das dazugehörige Rezept.
Zutaten
- 60 ml BACARDÍ Superior Rum
- 6 Blätter frische Minze
- 3 Gurkenscheiben
- 45 ml Süß-Sauer-Mix (15 ml Zucker 2:1, 30 ml frischer Limettensaft; einen halben Tag ziehen lassen)
- 1 Spritzer Absinth
- 50 ml Mineralwasser
Zubereitung
Den Süß-Sauer-Mix zusammen mit der Minze und der Gurke in einen Cocktail-Shaker geben. Vorsichtig zerquetschen und BACARDÍ Superior Rum sowie Eis hinzufügen. Kräftig schütteln und zweifach ins vorgekühlte, mit Absinth ausgespülte Coupette-Glas abseihen. Mit Mineralwasser auffüllen, Minze und einer Gurkenscheibe garnieren und servieren.

Eine preisgekrönte Barkeeperin verrät ihre Cocktailrezepte
Am liebsten trinkt sie Mojito oder Daiquiri. Rike Kurrle mag es klassisch, dafür aber mit sehr hochwertigen Zutaten. Das ist Trend am Tresen. Qualität und Rückbesinnung auf tradierte Rezepturen. Den beobachtet die Barkeeperin auch in der Frankfurter "Harry's New York Bar". Seit zehn Jahren mixt sie dort Old-Fashioned-Drinks und Eigenkreationen. Rike Kurrles mixologisches Repertoire ist weit gefächert. Die 32-Jährige verwendet für ihre Drinks teilweise sogar selbst angesetzte Liköre.
Gute Cocktails sind nicht immer kompliziert
Rikes Kurrles Passion für den kreativen Getränkemix begann mit einem Auslandsaufenthalt. Als 16-Jährige lebte sie ein Jahr lang in Ilhéus, einer kleinen Stadt im Nordosten Brasiliens. "Es gab überall Straßenstände, wo Caipirinha verkauft wurde. Die waren zwar nicht aufwendig gemacht, schmeckten dafür aber fantastisch", erinnert sie sich. Selbst probiert hat sie die hochprozentigen Drinks natürlich erst später, aber mixen durfte sie damals schon. "Das gehörte bei Familienfeiern dazu, dass die Jungen die Cocktails machen."
Die besondere Athmosphäre einer Bar
Nach der Schule startete sie eine Ausbildung zur Hotelfachfrau in einem Frankfurter Hotel. Das Treiben in der Hotelbar faszinierte sie. "Ich konnte von der Rezeption aus direkt in die Bar gucken. Das war wie eine andere Welt. Die Musik, die Menschen und die Stimmung." In den letzten Monaten ihrer Ausbildung kam sie dann endlich hinter den Tresen. Und bleibt dem Dienst am Shaker bis heute treu. Seit 2004 arbeitet sie in der renomierten "Harry's New York Bar".
Als Frau in einer Männerwelt
Ein weiblicher Barkeeper war nicht immer eine Selbstverständlichkeit. Auch heute dominieren ihre männlichen Kollegen die Branche. Aber der Anteil kreativer Barmaids steigt stetig. In Berlin fand in diesem Jahr erstmalig der Cocktailwettbewerb "Barmaid Olympics" für Barfrauen statt. Rike Kurrle gewann mit ihrer Kreation "Misses Pott and her Quincylicor" den ersten Platz. Die Basis ihres Gewinnercocktails ist ihr selbst gemachter Quittenlikör, hinzu kommen rauchiger Sherry und Wermut.
Einiges ändert sich im Barbetrieb. Zum Beispiel die Trinkgewohnheiten der Frauen. Dass diese eher süße Drinks mögen, sei schon lange vorbei, sagt Rike Kurrle. "Frauen wollen ehrliche Drinks statt Papierschirmchen." Für EMOTION kreierte sie einen Cocktail mit dem peruanischen Traubenbrand Pisco, Maracujasaft und grünem Tee, der frisch und würzig schmeckt. Mit Minze und Zitronenzeste statt süßer Cocktailkirsche verfeinert, fragt bestimmt niemand mehr nach dem bunten Schirmchen.
Cocktail: Pure EMOTION (mit Alkohol)
Für den Eistee:
3 Beutel grüner Tee mit Maracuja, Nelken, 2 Zweige Minze und eine Prise Zimtpulver
Für den Cocktail:
selbst gemachter Eistee
4 cl Pisco (El Diablo de los Andes)
2 cl Maracujasaft
2 cl Zuckersirup
1 cl frischen Limettensaft
4 cl Maracujasirup
3 Zweige Minze
Für den Eisteee zuerst die Zutaten in 5 cl Wasser geben und 5 Minuten ziehen lassen. Danach durch ein feines Teesieb abseihen und in den Kühlschrank stellen. Wenn der Eistee abgekühlt ist, alle Zutaten mit zwei Zweigen Minze und Eiswürfeln in einen Shaker geben und kräftig shaken. Ein großes Weinglas mit Eiswürfeln füllen und den Cocktail durch ein Teesieb eingießen. Zum Schluss Zitronenzeste auf den Cocktail geben und mit Minze garnieren.
Cocktail: Verbotene Früchte (alkoholfrei)
Zutaten
2 EL tiefgefrorene rote Beeren
Saft einer 1/2 Limette
2 cl Zuckersirup
Ginger Beer
Die Beeren in einem Shaker zerdrücken, Limettensaft, Zuckersurup und Eiswürfel dazugeben und kräftig shaken. Das Ganze in ein Longdrinkglas geben, mit Ginger Beer (scharfe Ingwer-Limonade) auffüllen und einer Limettenscheibe garnieren. Am besten mit Strohhalm und langem Löffel servieren.
